A Trying Night

Do you ever have one of those nights where you think you may never sleep?  Maybe you have cared for a sick child all night.  It isn’t quite the same but caring for an ill spouse can be super challenging.

Andrew did a lot of wandering last evening which reminded me of my time working in the Alzheimer’s unit.  He would sit and get up 30 seconds (or less) later, walk around the room or into another and return to start the whole process over.  He did this about 3 hours.  It seemed rather absurd when he hasn’t been walking much at all.  In fact while we were out getting meds and hunting the Goodwill for athletic pants yesterday he was too tired to walk and we used the wheelchair. Changes In All Ways

I am a very private person about struggles in my life.  I would rather keep things to myself and a few close friends.  However my husband is continually asking me to write.  He wants me to be down right brutally honest about caring for him as his Parkinson’s is quickly progressing and both of our struggles with it.  I feel sick at the thought of sharing these so very personal feelings.  However I think I am going to jump way outside of my comfort zone and listen to my friend when she tells me he wants to leave his legacy.   So here goes I am jumping and I am sure my blog will change as well.
This is my Andrew only four short months ago.  He was very full of life.  Not saying we weren’t seeing some symptoms of Parkinson’s at that point but he was driving all over our area of the country taking pictures of families for their church directories.  I kind of cringe at this picture as he called and asked me to come pose with him the evening it was taken.  I had had a difficult day and I really hate to look at myself so I skipped out on him.  I wish I could go back and be there now!

Canning Jar Venison Stew

I figure it is about time I start sharing some of my canning jar recipes. What are they really? Well they are meals that I make from items I have canned during the year whether it be from garden produce or a really great deal on meat at the store.

Today I want to share a simple Venison Stew recipe that is so easy you dump everything in the crockpot and let it simmer until supper.

Canning Jar Venison Stew

  • 2012 02 14 22.20.25 300x225 Canning Jar Venison Stew1 quart yukon gold potatoes (can be baby whole, sliced or diced)
  • 1 pint carrot coins
  • 1 jelly jar mushrooms
  • 1 pint cubed venison
  • 1 pint carmelized onions
  • 1 envelope brown gravy mix (or homemade equivalent)

Dump all in a 3 qt or larger crockpot and simmer on low 6-8 hours.
