Menu Plan Monday
I have a bit of a crazy week this week due to the fact Jess and I are leaving for Mexico on Saturday morning. We are getting very excited to go on our mission trip and I know food for the week really hasn’t been on my mind much. I know if I don’t plan this my week will just get more unorganized. So I plan to go for simplicity this week if at all possible.
- Taco Pasta
- Sausage Ziti
- Sloppy Joes
- Sub Sammies
- Pancakes
That should be it a short week and the guys will eat freezer meals this weekend if they are around much.
Menu Plan Monday Healthified
We are making some changes in my home as a family and trying to eat healthier. We are watching our portions and following a new eating program which I will share with you sometime this week. We won’t be completely eliminating any food but learning how to enjoy things within reason.
- Quarter pound extra lean burgers on light wheat buns with all the veggie fixins, cauliflower and choice of fresh fruit.
- Whole wheat rotini with marinara and meatballs and side salads.
- Baked crispy fish and homemade potato wedges.
- Salsa chicken and black beans with brown rice
- Taco salads (this can be so healthy with the right toppings and portion control)
- Ham egg bake
- Leftovers and soup
Menu Plan Monday
We are having horrible blowing snow and the boys have been home all day and full of energy to top it off. Andrew came home early from work as soon as they pulled the plows off the road. Little to say I have been distracted and occupied most of the day. Now that I have done most of the dishes and a bit of laundry I had better post the menus for the week.
- Mexican Pizza (using up leftover taco meat)
- Creamed Turkey Sandwiches
- Goulash
- Beef Hashbrown Bake
- Baked Potato Bar
- Crab Cakes and Pasta

Menu Plan Monday Pantry Challenge Week 3
It should be an exciting week around My Red Apron as we are having a Foodie Fest. To kick it off we are going to start with our menu plan because what foodie doesn’t need food. And throughout the week you are going to see giveaways, recipes and more. I hope you can stop by all week.
On to this weeks menu…
- Garlic Chicken Pizza with Caramel Apple Dessert Pizza
- Turkey Noodle Soup
- Spaghetti and Garlic Herb Bread
- Sub Sammies (we have to eat in the car a night on our way to a campout)
- Tacos (our last family Christmas)
- Dad’s Choice night (I have a meeting so they fix whatever they find with our pantry stock I don’t worry much about it)
Menu Plan Monday ~ Pantry Challenge Week 2
It is week two of the Eat Out of the Pantry Challenge and as you can tell by yesterdays Freezer Inventory post I am still well stocked. I have taken out meat for the week and have a decent plan of how to continue avoiding spending money on groceries. In the past week I spent 99 cents on a half gallon of juice which was on mark down when I went to use some free coupons. Otherwise we have eaten completely out of the pantry and freezers in the house. Here is the plan for the upcoming week.
- Steak Stuffed Pitas with French Fries and Salad
- Hamburger Sandwiches with Jello cups
- Pancakes with Fruit
- Enchiladas with Spanish Rice
- Beef & Broccoli Stir Fry
- Beef Stroganoff with Corn
- Applesauce Pork Chops with Mashed Sweet Potatoes
That should do it and I have everything in the house so no running to the store unless there is an unpassable sale.
Menu Plan Monday – Pantry Challenge Week 1
We are officially off and running with our pantry challenge. I really hope I can stick to using almost all ingredients out of the pantry in the next month. Here is our first weeks plan.
- Mock Panda Express Orange Chicken with Steamed Rice
- Chili with Honey Cornbread
- Sausage and Veggie Pizza
- Ham & Cheese on Rye Paninis with Fries
- Porcupine Meatballs and Mashed Taters
- Grilled Tilapia with Wild Rice Pilaf
- Russian Chicken and Homemade Bread
We have everything in the house for the week so there shouldn’t be any reason to go shopping with the exception of any can’t miss grocery deals combined with coupons.
