I have been having a really rough time with my fibromyalgia lately.  Basically I feel like I am just not functioning at a very high level.  Last night I rounded up the younger boys (oldest was at work) and starting hitting the laundry and dishes hard.  We got about half of it done.

They also helped plan the menu for the week.  To make it less stressful we incorporated some fully and partially made meals.  I don’t mean out of the box meals but things we have canned and things frozen but homemade.

Monday:  Homemade Pizza

Tuesday: Hashbrown Bake (this is premade in the freezer)

Wednesday: Beef Stew (whatever is leftover will be canned for an easy meal later but I got a nice roast on markdown)

Thursday: Tacos (the meat is precooked and seasoned in the freezer.  I will still need to fry shells.)

Friday: Homemade Hot Pockets (we haven’t decided on a flavor yet but will be working on a freezer inventory this week and see what we have an abundance of)

Saturday: Stir fry (I have canned marinated chicken ready to toss with frozen veggies)

Sunday: Russian Chicken (my hubby’s favorite childhood meal)

I have truly missed blogging and I hope with the seasons shifting my body adapts soon.  For now I am feeling better and will work on keeping in touch more.  Have a great day!

Monday Menu Plan August 2

I am back home from camp and things are settling down a little but not much.  Later this week I will head out to visit my mother in law.  We are going for easy food this week as the laundry may feel like it is taking over life and I have a lot to complete before running again.

Monday: Grilled Cheese and veggies

Tuesday: Goulash and Garlic Bread

Wednesday: Hoagies

And I am off the cooking the rest of the week.  What is your plan this week?

Well I am home again and while it was a good trip and we enjoyed time visiting with family and friends it is wonderful to be home.  I have a lot to catch up on this week both on the blog and around the house.  I am really excited to try some new recipes this week and update you on how they turn out!

  • 3-Cheese Pasta Bake (great for a budget friendly meat free night)
  • French Onion Burgers (a budget twist on a French Dip it looks so awesome!)
  • Pizza (we got a great deal on Pepperoni this weekend on the way home from Chicago at Kroger, wish they would open one in NW Iowa)
  • Russian Chicken and Steamed Broccoli
  • Ham and Potatoes
  • Leftovers

We are making some changes in my home as a family and trying to eat healthier.    We are watching our portions and following a new eating program which I will share with you sometime this week.  We won’t be completely eliminating any food but learning how to enjoy things within reason.

  • Quarter pound extra lean burgers on light wheat buns with all the veggie fixins, cauliflower and choice of fresh fruit.
  • Whole wheat rotini with marinara and meatballs and side salads.
  • Baked crispy fish and homemade potato wedges.
  • Salsa chicken and black beans with brown rice
  • Taco salads (this can be so healthy with the right toppings and portion control)
  • Ham egg bake
  • Leftovers and soup

Menu Plan Monday

We are having horrible blowing snow and the boys have been home all day and full of energy to top it off.  Andrew came home early from work as soon as they pulled the plows off the road.  Little to say I have been distracted and occupied most of the day.  Now that I have done most of the dishes and a bit of laundry I had better post the menus for the week.

  • Mexican Pizza (using up leftover taco meat)
  • Creamed Turkey Sandwiches
  • Goulash
  • Beef Hashbrown Bake
  • Baked Potato Bar
  • Crab Cakes and Pasta
