My crockpot meal of the day is Russian Chicken.  I know this isn’t a new one but my hubby has been slightly hinting that he would like to have it again.  It is also my weigh in group and church night on Wednesdays so things get a little hectic around supper time. Have an easy but wonderful meal even when it is a busy night!

Broccoli & Cauliflower Chowder

Here is another recipe from the Fast & Frugal Cookbook.  I have adapted it to cook in a crockpot.  Make sure to check out the giveaway I have going on for this cookbook.

Broccoli & Cauliflower Chowder

8 cups chicken broth made from bouillon
1 (32 oz) bag of hasbrowns
2 pounds vegitarian sausage
2 pounds frozen broccoli & cauliflower
1 Tablespoon steak seasoning salt
2 Tablespoons dried chives

Brown sausage and toss all ingredients into crockpot.  Cook on low for 4-6 hours until veggies are tender.

Rhubarb & Walnut Crockpot Cake

I didn’t plan a crockpot meal for this week so I thought I would do a warm dessert.  It is so chilly here and a little treat tonight might warm the mens’ tummies.

Rhubarb & Walnut Crockpot Cake

1 box yellow cake mix
1 pint rhubarb sauce (I can my own)
1/2 cup melted butter
1/2 cup chopped walnuts

Pour rhubarb sauce in the bottom of the crock.  Mix together cake mix and butter until crumbly (oatmeal like texture) then sprinkle on the sauce.  Top with chopped walnuts.  Bake on low for 2-3 hours.  Top with whipped topping or ice cream and serve.

Russian Chicken & Veggies (Via the Crock)

2 whole chicken breasts
1 small bottle Russian dressing
1 packet onion soup mix
1 pound baby red potatoes
1 bunch of broccoli

Chop brocolli and halve potatoes.  Place in the bottom of crockpot.  Place chicken on top of veggies.  Sprinkle with soup mix and top with dressing.  Let cook on low 7 hours.  Serve warm.
