In The Kitchen – Updates

Well Jess is in the kitchen finishing up his chore of dishes and I am glad I am not the one having to do them although I was considerate and rinsed all the dishes well.

I finished the following…

  1. Shredded 10 bags of zucchini
  2. Cooked 5 bags of taco meat
  3. Made a double batch of broccoli cheese soup
  4. Made two dozen applesauce pancakes
I think I made a pretty good start on this but there is still a lot to do tomorrow.  The rest of the meat for chislic and meatballs is thawing along with the rhubarb that I dug out of the freezer.  Have a good night!  I know I am wiped out and still have more to do.

In The Kitchen

I was in desparate need of a kitchen day today. Here is what I plan to accomplish in the next two days.

  1. Shred zucchini – finished got 10 (2 cup) bags in the freezer
  2. Broccoli Cheese Soup –
  3. Chop Onions
  4. Taco Meat
  5. Meatballs
  6. Sausage Eggbake
  7. Chislic
  8. Pumpkin Zucchini Bread
  9. Rhubarb Crisp
  10. Pancakes

That should keep me busy for awhile.  I will keep you informed of my progress.

How-To Tuesday (Lazy Man’s German Chocolate Cake)

It is Jesse’s birthday tomorrow but we are celebrating tonight because Andrew will be working tomorrow evening.  I always let each family member pick a dessert for their birthday and it doesn’t have to be cake (sometimes it isn’t either).  Jesse chose to have German Chocolate cake and the family is thrilled with his choice.  This recipe is something my mom has passed onto the family.  I love the simplicity of starting with a cake mix but making something so much more special!  You would never think this cake is from a cake mix.  I haven’t taken time do step by step pictures but here is one of the final project.

Lazy Man’s German Chocolate Cake
Cake:
1 white cake mix
1 small box of instant chocolate pudding mix (we use chocolate fudge)
2 cups of milk

2 eggs

Beat well and pour into a greased 9×13 cake pan.  Bake at 350 for 30-35 minutes until toothpick comes out clean.  Cool cake and then frost.

Frosting:
1 stick butter
1 cup brown sugar
1 teaspoon vanilla
3 egg yolks

Beat well and cook on medium heat until thick on the stove.  Beat until cooled and then add 1 cup chopped nuts (we use pecans) and 1 cup coconut.

Chicken Enchilada Crockpot Casserole

1 pound shredded chicken breast
10 corn tortillas
2 cans cream soup of choice (mushroom or chicken are best)
1 can enchilada sauce
1 can of mushrooms
1 can of green chilies
8 oz shredded cojack cheese

Put all sauces, chicken and veggies in crock and stir. Slice tortillas in half and then in strips (I use a pizza cutter) and stir into sauce mix. Top with cheese and bake on high for 2-3 hours until cheese is very bubbly.
