I love to spend time in my kitchen and on occasion that involves making a treat for the family. I had some craisins to use up and concocted this yummy cookie recipe. The cookie sheet you use can make all the difference in the texture of your cookies. I recommend using one similar to the Norpro Stainless Steel Jelly Roll Baking Pan. I prefer the larger size so I don’t have to put so many rounds of cookies in the oven. The stainless steel pan also cooks more evenly.

Crazy Cranberry Cookies
1 cup brown sugar
1 cup softened butter
3 eggs
2 1/4 cups oatmeal
2 1/4 cups flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
6 oz bag dried cranberries
1 cup chopped walnuts
1 cup mini chocolate chips
Preheat oven to 375. Blend sugar and butter, add eggs until creamed. Add remaining ingredients and blend well. Drop by tablespoons onto a cookie sheet sprayed with cooking spray. Bake for 12 minutes until golden brown. Makes 3 1/2 dozen cookies.
