Thankfulness

Some days you just have to stop and tell everyone you are really full of thankfulness.  When I first started blogging I really just needed a space for me and since I was over run by the male population in my home I took my space online.  Now not really much of anyone read what I had to say and I didn’t really care but eventually I let go of that blog.  A few months later I decided to give it a whirl again but I changed the name and decided to attempt to wander outside of my blog and into a world of bloggers.  It meant putting myself out there and letting not only readers but fellow bloggers get to know me.  I am so very thankful that I made that move.  I have “met” so many great people but three bloggers (thanks Christy & Scott, Lynn and Sandy) always come to mind when I really think about how My Red Apron has changed my life.  I am really a private person and one who rarely talks in a group until I know people.  I spend almost all of my time with my family and a couple close friends.  Other than that no one knows me well.  So here I feel okay and unjudged for the most part.  In fact, I am often caught off guard by people knowing my blog or saying oh I love reading your blog.  Those moments blow me away because I guess I am just writing without really thinking who is reading.  I watch my numbers like most other bloggers but I guess I just still sit in shock at moments.  Anyway I am rambling and I wanted you all to know I am very thankful for what this blog has done and the part that you have played on this journey so far.

Dollars to Donuts Cookbook

I hoped to have this to you yesterday but unfortunately I suffer from migraines and I started the day with meetings and then poof it hit.  I really wanted to share this yesterday but a day late is still a great thing.

Dawn Welch (with Raquel Pelzel) wrote the Dollar to Donuts Comfort Food & Kitchen Wisdom from Route 66′s Landmark Rock Cafe.   As you can see the title is quite long but it is definately descriptive.  This cookbook has so many great recipes that I am not sure which one to share with you.  It also has a lot of “kitchen wisdom” or tips throughout the book. 

I am wishing it was spring about now with all the snow and rain and ice we have had so I think I am going to share an easy reminds me of spring recipe.

Strawberry Dessert Soup

Serves 6 ($1.15 per serving)

1 bag (1 pound) frozen and partially thawed strawberries with juices

2 cups sour cream

3/4 cup confectioners sugar

1 tablespoon grenadine syrup

1 tablespoon vanilla extract

1/4 cup half & half + 2 tablespoons (for serving)

Halve the strawberries while still partially frozen and place them in a large bowl.  Add the sour cream and gently mix together with the strawberries, using a rubber spatula, until well combined.  Stir in the sugar, grenadine, and vanilla, then add the 1/4 cup half & half and stir to blend.  Chill for at least 1 hour or up to 4 hours in a plastic container with a tight-fitting lid.  Shake vigorously before dividing among 6 bowls.  Drizzle a little of the remaining 2 tablespoons half & half over each bowl, swirl it in, and serve.

There are several recipes in here which are likely to be new to most people.  Each recipe lists servings, cost per recipe and per person.  You will also find a tip or hint if it applies to the recipe.  The only drawback I can find is that there is no nutritional information for each recipe.  The cookbook also offers the URL www.myd2d.com which will offer menu plans and several recipes from the book.

I am just putting this out there because I am not sure if you all know about it.  Every Thursday evening oldnavyweekly.com puts up a coupon game on their website.  You can move clothes around on the models for example and find hidden coupons.  Some of them are really great coupons but they do go quick so make sure you are there around 8 PM central time.
